Desi vorbim de aceeasi origine, profilul e complet diferit: la Guido, shotul are o aciditate vie si fructata, care iti lasa efectiv apa in gura – un profil expresiv, cu multe note fructate in prim plan.
Am ajustat macinatura, temperatura si raportul, si am reusit sa echilibrez extractia, introducand si o nota usoara de ciocolata, dar fara sa-i iau din personalitate – fructele raman in centrul atentiei.
La Sloane era invers: dominau notele ciocolatii si condimentate (cacao coapta, cuisoare), iar fructele ramaneau mai in fundal.
O experienta interesanta si un reminder ca prajitorul influenteaza enorm ce ajunge in ceasca.
O are si Yume :) sunt curios daca chiar sunt aceleași sau doar denumirea…
Tind sa zic ca da. Desi la Guido predomina notele fructate, dupa 13-14 zile de la prajire incep sa apara si tonuri ciocolatii-condimentate, asemanatoare cu cele simtite la Sloane. Cred ca are nevoie de cel putin 2 saptamani de odihna.

De la congelator ... doua cafele, de la care nu aveam mari asteptari, surprinzator de bune pentru dripper. Echilibrate, fara exagerari de arome induse, amareala practic inexistenta. Desi pe punga e scris clasicul omniroast romanesc, prajirea e medium semnificativ spre zona light. Mai bune decat destule cafele pe care le-am cumparat de la prajitorii nordice mediatizate intens pe internet. Asa de bune, incat nici nu le-am mai incercat pe espresso.

Azi am incercat un fel de cupping care implica si un pahar de martini. In locul acestuia am utilizat hario switch.

e foarte fain si light Shoebox - sunt cativa prajitori foarte buni in US (i-am pus pe toti cei incercati pe aici prin imagini)
stiu de Bani, am luat deja o tura, dar nu le-am desfacut - totusi nu arata ultralight si nici nu e (din ce mi-au spus cei care au mai luat cu mine), dar e destul de light si bun

O cafea care mi-a dat ceva batai de cap la inceput, cand incercam sa o extrag in stil
traditional. Abia dupa ce am inceput sa o rasnesc mai grosier, sa scad timpul de extractie la maxim 22s si sa lungesc ratia spre 1:2,5–1:2,6, s-au echilibrat notele citrice si a iesit in evidenta dulceata.
Presiunea in timpul extractiei a fost mai scazuta, in jur de 4–6 bar.
O cafea atipica din Brazilia, cu corp mic, note citrice care iti lasa apa in gura si un finish dulce.

19g in, 48-50 out, ~22s.
