Cafeaua in presa/media

(12-10-2021, 15:46)flipu2k Wrote: podcast cu John Buckman of Decent Espresso

- dark roast bun, 3rd wave e sour/limonade

Is Eugenioides the next big thing in coffee?

The World Barista Championship (espresso-based coffee) and the World Brewers Cup (filter coffee) took place recently in Milan, Italy. The talking point of the show has to be the coffee species that dominated honours - Eugenioides.
Esmeralda Special Gesha
I first heard of Eugenioides in 2015 when it was being used by Sarah Anderson, the USA Brewers Cup champion. I always like being at the world coffee competitions and snooping around back stage stealing sips of the different special coffees the various champions are preparing (this has got a bit harder in recent years as it gets more strict back stage...oh well, haha).
I was able to taste the Eugenioides coffee that year and it was very surprising. It had very low acidity and was creamy and sweet, but also for me presented a very prominent note of rice puffs with a thick texture.
Now, there is a reason it tastes so different – it is a different species entirely. You will often hear us discussing the virtues of different varieties and cultivars, which are nearly always derived of the Arabica species. Eugenioides is actually a parent species of arabica, along with robusta.
The discussion and awareness of different species really took a boost when Aaron Davies of Kew Gardens started to focus on documenting the unique coffee species that originate wildly along the east coast of Africa. Amazingly most of them had never been catalogued up until around 10 years ago.
By all accounts, most of the species are undrinkable, but there are exceptions. Recently, the species Stenophylia was introduced to speciality coffee as a species to consider with the impending impact of climate change. This is even more rare at this moment than Eugenioides which appears to be only grown on one or two farms.
Inmaculada in Colombia was the producer of the coffee I tasted that year and the producer of the majority of the coffees that are being talked about this year. It can be noted as the producer that has done the most work to popularise this species.
Esmeralda Special Gesha
The other lot was from Finca Las Nubes, also in Colombia. It appears only two farms produce this coffee in the entire world at this point and even in those cases the yields are very very small at 150g a tree.
At these yields, the species doesn’t appear to be a solution to climate change challenges, but more a new exotic coffee type that will undoubtedly be more sought after following these competitions.
It should be noted Hugh Kelly of Australia who placed third also used Liberica, another species, more well known than Eugenioides, but not previously recognised for its quality.
What is interesting to me is historically the competition has been catching up on the coffees we as an industry are rewarding elsewhere such as Gesha and high scoring aromatic coffee. There was reverence for Gesha a decade before it did well in the barista competitions, winning Brewers Cup before being used to win espresso competitions.
This in and of itself may indicate the big difference between espresso and filter coffee. Espresso is so much more concentrated than filter, so much so that in filter coffee the challenge is always to get the coffee to pop and acidity really drives this. In espresso pop is mandatory as it is so strong, the challenge instead is to balance acidity and flavour.
I have tasted a couple of lots of the Eugenioides over the last few years and so far I have been a bit confused by the profile. It’s so different, I find it hard to score, with the sweetness and low acidity. After all, it's often forgotten that bitterness can be and is a positive part of most coffee profiles alongside the other attributes. I haven’t tasted the winning profiles from this years competitors, which were in each case either blended with other coffees to bring the other attributes or drew from the benefits of experimental processing to enhance the fruit aspects that aren’t prominent in the profile normally.
Thinking about it, Sudan Rume, the arabica variety which was used by Sasa Sestic to win in 2015 was not known before the competition. I love that coffee, but it hasn’t become very prevalent since then.
There was a time when Gesha was a mysterious prized coffee and many had not tasted it. Now Gesha is relatively prevalent, obviously at highly varying qualities.
Eugenioides is definitely a different proposition. Gesha is effectively, at its best, a highhanded version of the properties that the industry scores well in Arabica, whereas this new species will surprise you if you get the chance to try it. I am not sure if we will be able to get hold of any with so little available but we will try and do so!
We have a Christmas box planned that looks to showcase other divisive and debated coffee profiles in the industry right now – fermentation tank flavour manipulation through the addition of fruits and other food ingredients. I have previously outlined my curiosity around these coffees and although I think for me the more natural terroir of coffee varieties in different locations with singular fermentation (no other food and drink added) is more valuable, it is interesting to experience and taste all experimentations happening in boutique coffee and we like to share them with our customers.

In the meantime, remember the name Eugenioides, with some already shortening this to "Eug"(pronounced like "huge" without the "H") it's sure to be a talking point over the coming years in speciality coffee.
Yours,
Maxwell

Apropo de cafeaua italiana: eram in Praiano in 2014 si aveau o miscela care iesea tare misto in cappuccino (au trecut 7 ani de atunci, nu dati cu pietre  Smile ).
