- There should be a nice layer of crema on top of the espresso (a few millimeters thick, completely covering the espresso). This comes from the release of carbon dioxide when the espresso is extracted.
- The color should be golden-brown to dark brown for a double shot.
- The crema should remain for at least three - five minutes if not longer.
- Espresso should be bitter, but not too bitter, for "Life is too short to be bitter"™ (our motto)
- It should be rich but not too rich. Extra rich shots are more characteristic to espresso ristretto shots.
- It should NEVER taste sour. A sour taste comes from over-extraction or stale coffee in an unclean machine.
- It should NEVER taste watery. This is a sign of under extraction.
